Spaghetti Salad

15 Minute Meals are the best. Something for the lunch box too. Prepping for all my options for when Juno starts pre-school.

Okay, who doesn’t love pasta or spaghetti?! We all love carbs PERIOD. I’ll keep it short and forget the story telling so we can all just get on with stuffing our faces with this guy right here. Boom!

What you need:

Whole wheat or Spelt Spaghetti but if you got normal that is fine too babes.

2 cloves of Garlic chopped

1/2 Ripe Avocado

Chopped Parsley

Chopped Cherry Tomatoes

1/2 Red Onions finely chopped

1 tsp chilli flakes

Juice of 1 Lemon

1-2 twigs of fresh Thyme

2-3 tsps of Extra Virgin Olive Oil

2 tsps Apple Cider Vinegar or Balsamic

Salt + Pepper to taste

What you do:

Boil and cool down Spaghetti or any kind of pasta you have. Set aside.

Chuck in the rest of the ingredients in a little bowl and give everything a good mix.

Add the dressing to the pasta or Spaghetti and give it a good toss.

Et Voila lunch/ dinner is served bebe.
